Learn to make this epic chicken dish from Stephanie of Tallawah Bamboo. She is sharing the authentic Taíno Jamaican recipe as learned on her travels to Spanish Town, Jamaica.
In this class you will prepare a Jamaican favorite. Baked or grilled jerk chicken is a flavorful, succulent dish featuring tender, juicy chicken with a crispy, caramelized exterior, and an intensely aromatic, spicy-sweet flavor profile. The "jerk" refers to a traditional Jamaican cooking style involving a robust marinade and dry rub.
In addition to the succulent Spanish Town Jamaican chicken, you will create a dish known as rice n’ peas. Rice and peas is a staple and beloved side dish in Jamaican and broader Caribbean cuisine, consisting of long-grain rice and legumes simmered in creamy coconut milk with various seasonings. Though called "peas," the dish is typically made with red kidney beans.
