The difference between French and Italian method macarons is the technique used to create them.
French macarons are made with a French meringue that is prepared using uncooked egg whites and sugar, then slowly adding almond flour to the meringue. Italian macarons are made using cooked simple syrup and egg whites to create a meringue, which is then combined with almond paste.
